Storage
- As with any raw seafood, in-shell and shucked oysters should be transported and
stored packed in ice and refrigerated. Store shucked oysters at 32-28 degrees F., in-shell oysters at 38 degrees F. Keep frozen products rigidly frozen until ready to use. Store in freezer at 0°F.
- Properly refrigerated shucked oysters will keep up to 14 days from the shucking date. In-shell oysters will keep up to 14 days from harvest.
- Refrigerate Live Oysters Properly - Live oysters should be stored in well ventilated refrigeration, not in airtight plastic bags or containers.
- Keep "Live" Oysters "Alive" - Don't cook or eat oysters if they have died during storage. Discard them.
